I am going
to use some of my live milk Kefir Grains to turn a can of organic coconut
milk into coconut milk Kefir. The process should be done at the same time
you are making your regular milk Kefir batch, this way you can borrow
and return the Milk Kefir Grains to the main batch of Kefir Grains
after you have strained and rinsed off the Coconut Kefir.
I take 2 Tbs of Milk Kefir Grains and place them in a clean jar. Add
1 can Organic Coconut Milk. Put the lid on the jar and ferment for 24 hours.
I started my next batch of Kefir Milk at the same time. I took the 2 Tbs
of Live Kefir Grains from there. Now I have a jar of Coconut Milk fermenting
and a jar of Kefir Goat Milk fermenting beside each other. This way when
they are ready I will be able to put the Kefir Grains I used to ferment
the coconut milk back in with the next goat milk batch. I only make Coconut
Milk Kefir once in a while.
It has been 24 hours and you can see the separation in the jar. The
Milk Kefir Grains are still in the mix.
Looking in you can see the Kefir Grains floating on top. With the lid
on tight, gently shake the jar to mix the Coconut Kefir and grains together.
This will make it easier to strain.
Pour into a plastic strainer on your bowl. This will catch all the
Kefir Grains you borrowed from the main batch yesterday.
I like to rinse the Kefir Grains after doing coconut milk so not to
change the flavor of the next batch of Goat Milk Kefir. I am using de-chlorinated
water or bottled water. Tap water with chlorine in it is not good for the
good bacteria living in the Kefir Grains. It may kill or damage it.
Now the grains are all clean and await the rest of their family to
join. Put them aside for now in a safe place.
Seal up your jar of Coconut Milk Kefir and put it in the fridge. The
resulting taste is a bit lighter, tangy, tarty, sourish semi-sweet coconut
milk compared to what is was before fermentation. I like to use it as an
addition to desserts. Pour some over fruit and cake and sprinkle with spice
such as Cardamon and or Cinnamon. Yummmm! Using Coconut Milk Kefir is good
for people that cannot tolerate dairy at all. I am not sure how long it
will last in the fridge but I know it is safe up to a week. I have not
kept it longer.
Now take you other jar of ready to be strained Goat Milk Kefir you
started at the same time and pour it into the strainer with the already
cleaned Kefir Grains you used to make the Coconut Milk Kefir. Now you can
continue on to make your Goat Milk Kefir. If you have not seen my Step
